- 1 lb dried white beans
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 smoked ham hock
- 6 cups chicken broth
- 1 tsp black pepper
- 1 tsp thyme
- Salt to taste
- Rinse and soak the beans overnight.
- In a large pot, sauté onion, carrots, celery, and garlic until softened.
- Add the soaked beans, ham hock, chicken broth, black pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Remove the ham hock, shred the meat, and return it to the pot.
- Season with salt to taste and serve hot.
