Ingredients

  • 1 lb dried white beans
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 smoked ham hock
  • 6 cups chicken broth
  • 1 tsp black pepper
  • 1 tsp thyme
  • Salt to taste

Instructions

  1. Rinse and soak the beans overnight.
  2. In a large pot, sauté onion, carrots, celery, and garlic until softened.
  3. Add the soaked beans, ham hock, chicken broth, black pepper, and thyme.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  5. Remove the ham hock, shred the meat, and return it to the pot.
  6. Season with salt to taste and serve hot.

Notes

  • Use any leftover ham for extra flavor.
