A creamy and cheesy keto-friendly gratin made with spinach and cauliflower.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam cauliflower florets until tender, about 5-7 minutes.
  3. In a skillet, sauté garlic until fragrant, then add spinach and cook until wilted.
  4. In a bowl, mix heavy cream, cheddar cheese, Parmesan cheese, salt, pepper, and nutmeg.
  5. Combine cauliflower, spinach, and cream mixture in a baking dish.
  6. Bake for 20-25 minutes until golden and bubbly.
  7. Let cool slightly before serving.
