Spinach cream cheese chicken roll-ups are a delicious keto-friendly dish. They combine tender chicken breasts with a creamy spinach and cheese filling.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cream cheese, softened
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix cream cheese, spinach, mozzarella, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Flatten chicken breasts with a meat mallet.
  4. Spread filling evenly over each chicken breast.
  5. Roll up chicken tightly and secure with toothpicks.
  6. Heat olive oil in a skillet over medium-high heat.
  7. Sear chicken rolls for 2-3 minutes per side until golden brown.
  8. Transfer to baking dish and bake for 20-25 minutes.
  9. Remove toothpicks before serving.

Notes

  • Use kitchen twine if toothpicks don’t hold well.
