A simple and delicious dish featuring bell peppers stuffed with a creamy spinach and cheese mixture, baked to perfection.

Ingredients

  • 4 large bell peppers (any color)
  • 1 cup fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a pan, heat olive oil and sauté garlic until fragrant.
  4. Add spinach and cook until wilted. Remove from heat.
  5. Mix spinach with cream cheese, mozzarella, Parmesan, salt, and pepper.
  6. Stuff the mixture into the bell peppers.
  7. Place peppers in a baking dish and bake for 25-30 minutes until tender.
  8. Serve warm.
