Delicious spinach and feta stuffed mushrooms for a tasty appetizer.

Ingredients

  • 12 large mushrooms
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cream cheese, softened
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the mushrooms and chop them finely.
  3. In a skillet, heat olive oil over medium heat.
  4. Add garlic and chopped mushroom stems, sauté until tender.
  5. Stir in spinach and cook until wilted.
  6. Remove from heat and mix in feta cheese, cream cheese, breadcrumbs, salt, and pepper.
  7. Stuff each mushroom cap with the mixture.
  8. Place stuffed mushrooms on a baking sheet.
  9. Bake for 20-25 minutes or until mushrooms are tender.

Notes

  • Serve warm for best flavor.
  • Can be made ahead and reheated.
  • Try adding herbs for extra flavor.
