- 12 large mushrooms
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup cream cheese, softened
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- Remove the stems from the mushrooms and chop them finely.
- In a skillet, heat olive oil over medium heat.
- Add garlic and chopped mushroom stems, sauté until tender.
- Stir in spinach and cook until wilted.
- Remove from heat and mix in feta cheese, cream cheese, breadcrumbs, salt, and pepper.
- Stuff each mushroom cap with the mixture.
- Place stuffed mushrooms on a baking sheet.
- Bake for 20-25 minutes or until mushrooms are tender.
