A healthy and flavorful keto bowl featuring spinach pesto.

Ingredients

  • 2 cups fresh spinach
  • 1/4 cup olive oil
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 1 tbsp lemon juice
  • Salt to taste
  • 1 cup cooked chicken, diced
  • 1/2 avocado, sliced
  • 1/4 cup cherry tomatoes, halved

Instructions

  1. Blend spinach, olive oil, parmesan, garlic, pine nuts, lemon juice, and salt in a food processor until smooth.
  2. Toss cooked chicken with half the pesto.
  3. Arrange chicken, avocado, and cherry tomatoes in a bowl.
  4. Drizzle remaining pesto on top.
  5. Serve immediately.

Notes

  • Store leftover pesto in an airtight container for up to 3 days.
  • Replace pine nuts with walnuts for a different flavor.
  • Add more olive oil if the pesto is too thick.
