- 2 cups fresh spinach
- 1/4 cup olive oil
- 1/4 cup grated parmesan cheese
- 2 cloves garlic
- 1/4 cup pine nuts
- 1 tbsp lemon juice
- Salt to taste
- 1 cup cooked chicken, diced
- 1/2 avocado, sliced
- 1/4 cup cherry tomatoes, halved
- Blend spinach, olive oil, parmesan, garlic, pine nuts, lemon juice, and salt in a food processor until smooth.
- Toss cooked chicken with half the pesto.
- Arrange chicken, avocado, and cherry tomatoes in a bowl.
- Drizzle remaining pesto on top.
- Serve immediately.
Notes
