A keto-friendly stuffed chicken dish with spinach and prosciutto.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 slices prosciutto
  • 1 cup fresh spinach
  • 1/4 cup cream cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast.
  3. Mix spinach, cream cheese, garlic powder, salt, and pepper.
  4. Stuff the mixture into the chicken pockets.
  5. Wrap each breast with 2 slices of prosciutto.
  6. Heat olive oil in a skillet over medium heat.
  7. Sear chicken for 2 minutes per side.
  8. Transfer to oven and bake for 20 minutes.
  9. Rest for 5 minutes before serving.

Notes

  • Use thick chicken breasts for easier stuffing.
  • Check internal temperature reaches 165°F (74°C).
