A quick and healthy breakfast with spinach, turkey, and eggs.

Ingredients

  • 2 large eggs
  • 1/2 cup chopped cooked turkey
  • 1 cup fresh spinach
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chopped turkey and cook for 2 minutes.
  3. Add spinach and sauté until wilted.
  4. Crack eggs into the pan and scramble with the turkey and spinach.
  5. Cook until eggs are done. Season with salt and pepper.
  6. Serve hot.

Notes

  • Use leftover turkey for convenience.
  • Add cheese if desired.
