Ingredients

  • 1 cup fresh spinach, chopped
  • 1 egg
  • 1/4 cup almond flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 cups chicken broth
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 1/2 cup diced celery
  • 1/2 cup diced carrots

Instructions

  1. In a bowl, mix ground turkey, spinach, egg, almond flour, garlic powder, onion powder, salt, and pepper. Form into small meatballs.
  2. Heat olive oil in a pot over medium heat. Add onions, celery, and carrots. Cook for 5 minutes.
  3. Pour in chicken broth and bring to a simmer.
  4. Add meatballs to the broth and cook for 15-20 minutes until meatballs are done.
  5. Serve hot.
