A delicious strawberry cheesecake perfect for Valentine’s Day.

- 200g digestive biscuits
- 100g unsalted butter, melted
- 500g cream cheese
- 150g caster sugar
- 2 eggs
- 1 tsp vanilla extract
- 200g fresh strawberries, pureed
- 100ml double cream
- Crush the biscuits and mix with melted butter. Press into a tin.
- Beat cream cheese and sugar until smooth. Add eggs one at a time.
- Stir in vanilla and strawberry puree. Fold in double cream.
- Pour mixture over the biscuit base. Bake at 160°C for 40 minutes.
- Cool completely before serving.
Notes
- Chill for at least 4 hours before serving.
- Decorate with fresh strawberries.
