Easy strawberry shortbread bars with buttery crust and sweet strawberry filling.

  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup strawberry jam
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix butter, sugar, flour, and salt until crumbly.
  3. Press 2/3 of the mixture into a greased 9×9 inch pan.
  4. Bake for 15 minutes.
  5. Spread strawberry jam over the baked crust.
  6. Sprinkle remaining crumb mixture on top.
  7. Bake for another 20 minutes.
  8. Cool completely before cutting into bars.
