- 4 large bell peppers
- 1 cup cooked rice
- 1 pound ground beef
- 1 can diced tomatoes
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, cook onion and garlic until soft.
- Add ground beef and cook until browned.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
- Fill each bell pepper with the mixture.
- Top with shredded cheese.
- Place in a baking dish and cover with foil.
- Bake for 30 minutes, then remove foil and bake for an additional 10 minutes.
