Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet, cook onion and garlic until soft.
  4. Add ground beef and cook until browned.
  5. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Fill each bell pepper with the mixture.
  7. Top with shredded cheese.
  8. Place in a baking dish and cover with foil.
  9. Bake for 30 minutes, then remove foil and bake for an additional 10 minutes.
