  • 4 bell peppers
  • 1 pound ground turkey
  • 1 cup cauliflower rice
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet, cook ground turkey until browned.
  4. Add cauliflower rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  5. Mix well and cook for 5 minutes.
  6. Stuff the mixture into the bell peppers.
  7. Top with shredded cheese.
  8. Place stuffed peppers in a baking dish.
  9. Bake for 25-30 minutes.
  10. Serve warm.
