  • 2 boneless, skinless chicken breasts
  • 1/2 cup cream cheese
  • 1/4 cup shredded mozzarella
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast, being careful not to cut through.
  3. Mix cream cheese, mozzarella, basil, parsley, garlic, salt, and pepper in a bowl.
  4. Stuff each chicken breast with the cheese mixture.
  5. Secure with toothpicks if needed.
  6. Brush chicken with olive oil and coat with breadcrumbs.
  7. Place in a baking dish and bake for 25-30 minutes until cooked through.
  8. Let rest for 5 minutes before serving.
