A juicy pork tenderloin stuffed with flavorful ingredients and roasted to perfection.

  • 1 pork tenderloin (about 1.5 lbs)
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 375°F.
  2. Butterfly the pork tenderloin by slicing it lengthwise, leaving about 1/2 inch uncut.
  3. Spread spinach, feta cheese, and garlic evenly over the tenderloin.
  4. Roll the tenderloin tightly and secure with kitchen twine.
  5. Rub olive oil, salt, pepper, and rosemary over the outside.
  6. Place on a baking sheet and roast for 25-30 minutes or until internal temperature reaches 145°F.
  7. Let rest for 5 minutes before slicing.
