  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice pork tenderloin lengthwise, leaving one side intact.
  3. Mix spinach, sun-dried tomatoes, feta, and garlic in a bowl.
  4. Stuff the mixture into the pork tenderloin.
  5. Secure with kitchen twine.
