A delicious sugar-free blueberry cream cheese loaf that is perfect for breakfast or as a snack.

  • 1/2 cup cream cheese, softened
  • 1/4 cup unsweetened applesauce
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, baking powder, and salt.
  3. In another bowl, beat cream cheese and applesauce until smooth.
  4. Add eggs and vanilla extract to the cream cheese mixture, and mix well.
  5. Combine the wet and dry ingredients.
  6. Fold in the blueberries gently.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Let it cool before slicing.
