  • 1/2 cup almond flour
  • 2 tbsp melted butter
  • 1 tbsp lemon juice

Instructions

  1. Mix almond flour and melted butter to form the crust. Press into mini muffin tins.
  2. Beat cream cheese, erythritol, vanilla, and lemon juice until smooth.
  3. Whip heavy cream until stiff peaks form, then fold into cream cheese mixture.
  4. Spoon filling over crusts and refrigerate for at least 2 hours.
  5. Serve chilled.
