- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup granulated erythritol
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 3 large eggs
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 cup grated carrots
- 1/4 cup chopped walnuts (optional)
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix almond flour, coconut flour, erythritol, baking powder, cinnamon, nutmeg, and salt.
- Add eggs, melted coconut oil, and vanilla extract. Stir until combined.
- Fold in grated carrots and walnuts.
- Pour batter into the loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes

- For extra moisture, add 1-2 tbsp of unsweetened almond milk.
