- 2 cups unsweetened shredded coconut
- 1/2 cup almond flour
- 1/3 cup powdered erythritol
- 1/4 tsp salt
- 2 large egg whites
- 1 tsp vanilla extract
- 1 tbsp coconut oil, melted
- Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
- In a bowl, mix shredded coconut, almond flour, erythritol, and salt.
- In another bowl, whisk egg whites until frothy. Add vanilla and coconut oil.
- Combine wet and dry ingredients until well mixed.
