Simple sugar-free keto coconut macaroon cookies perfect for a low-carb diet.

  • 2 cups unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/3 cup powdered erythritol
  • 1/4 tsp salt
  • 2 large egg whites
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil, melted

Instructions

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix shredded coconut, almond flour, erythritol, and salt.
  3. In another bowl, whisk egg whites until frothy. Add vanilla and coconut oil.
  4. Combine wet and dry ingredients until well mixed.
  5. Scoop tablespoon-sized portions onto the baking sheet. Shape into mounds.
  6. Bake for 15-18 minutes until golden brown.
  7. Let cool before serving.
