- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp Italian seasoning
- 1/2 cup grated Parmesan cheese
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- Season chicken breasts with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add heavy cream, chicken broth, and Italian seasoning. Stir well.
- Add Parmesan cheese and mix until melted.
- Add spinach and sun-dried tomatoes. Cook for 2-3 minutes until spinach wilts.
- Return chicken to the skillet. Simmer for 5 minutes until chicken is fully cooked.
