Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped

Instructions

  1. Season chicken breasts with salt, pepper, and garlic powder.
  2. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add heavy cream, chicken broth, and Italian seasoning. Stir well.
  4. Add Parmesan cheese and mix until melted.
  5. Add spinach and sun-dried tomatoes. Cook for 2-3 minutes until spinach wilts.
  6. Return chicken to the skillet. Simmer for 5 minutes until chicken is fully cooked.
  7. Serve hot.
