- 1 pound ham, diced
- 1 cup dried white beans, soaked overnight
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for another minute.
- Stir in the diced ham and soaked beans.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and simmer for 1 to 1.5 hours until beans are tender.
- Blend the soup until smooth, then stir in the heavy cream.
