A hearty and comforting ham and bean soup that is thick and creamy.

Ingredients

  • 1 pound ham, diced
  • 1 cup dried white beans, soaked overnight
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until soft.
  2. Add garlic and cook for another minute.
  3. Stir in the diced ham and soaked beans.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and simmer for 1 to 1.5 hours until beans are tender.
  6. Blend the soup until smooth, then stir in the heavy cream.
  7. Add thyme, salt, and pepper, and cook for another 10 minutes.

Notes

  • Soaking the beans overnight helps them cook faster.
  • You can use leftover ham for this recipe.
  • Adjust seasoning to your preference.
