A simple and delicious tomato basil soup that’s easy to make and full of flavor.

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 lbs fresh tomatoes, diced
  • 1 cup fresh basil leaves, chopped
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup heavy cream (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic. Cook until soft, about 5 minutes.
  3. Stir in tomatoes and basil. Cook for another 5 minutes.
  4. Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in salt, pepper, and heavy cream if using. Simmer for 5 more minutes.
  7. Serve hot with crusty bread.

Notes

  • Use ripe tomatoes for the best flavor.
  • You can substitute canned tomatoes if fresh ones are not available.
  • For a vegan version, omit the heavy cream.
