- 4 cups chicken or vegetable broth
- 1 small white onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 2 tbsp butter
- 1/4 cup grated Parmesan cheese
- 1 tbsp white truffle oil
- Salt and pepper to taste
- Fresh parsley for garnish
- Heat the broth in a saucepan and keep it warm.
- Melt butter in a large pan and sauté onion and garlic until soft.
- Add Arborio rice and stir for 2 minutes.
- Pour in white wine and cook until absorbed.
- Add broth one ladle at a time, stirring until absorbed before adding more.
- Once rice is creamy and tender, stir in Parmesan cheese and truffle oil.
- Season with salt and pepper.
- Garnish with fresh parsley and serve immediately.
