A rich and creamy truffle risotto made with white truffles for an indulgent dish.

Ingredients

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1 small white onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 2 tbsp butter
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp white truffle oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the broth in a saucepan and keep it warm.
  2. Melt butter in a large pan and sauté onion and garlic until soft.
  3. Add Arborio rice and stir for 2 minutes.
  4. Pour in white wine and cook until absorbed.
  5. Add broth one ladle at a time, stirring until absorbed before adding more.
  6. Once rice is creamy and tender, stir in Parmesan cheese and truffle oil.
  7. Season with salt and pepper.
  8. Garnish with fresh parsley and serve immediately.
