A comforting and hearty soup that combines the flavors of lasagna with ground turkey for a lighter twist.

Ingredients

  • 1 lb ground turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh basil

Instructions

  1. Brown ground turkey in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then add broken lasagna noodles.
  5. Cook until noodles are tender, about 10 minutes.
  6. Serve topped with ricotta, mozzarella, and fresh basil.

Notes

  • Use gluten-free lasagna noodles if needed.
  • Can substitute ground beef for turkey.
