  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract

Instructions

  1. In a medium saucepan, whisk together milk, sugar, cornstarch, and salt.
  2. Heat over medium heat, stirring constantly, until the mixture thickens and boils.
  3. Reduce heat and simmer for 1 minute, then remove from heat.
  4. In a separate bowl, whisk egg yolks. Gradually mix in a small amount of the hot milk mixture to temper the yolks.
  5. Pour the tempered yolks back into the saucepan and cook for 2 more minutes, stirring constantly.
  6. Remove from heat and stir in butter and vanilla extract.
  7. Pour the pudding into serving dishes and chill for at least 2 hours before serving.
