A flavorful vegan twist on the classic Indian dish, featuring chickpeas in a rich, spiced tomato sauce.

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic and ginger, cook for 1 minute.
  4. Add garam masala, turmeric, cumin, coriander, and chili powder. Cook for 30 seconds.
  5. Mix in tomato paste, diced tomatoes, and coconut milk. Simmer for 10 minutes.
  6. Add chickpeas and salt. Simmer for another 10 minutes.
  7. Garnish with fresh cilantro before serving.

Notes

  • Serve with rice or naan bread.
  • Adjust chili powder to your preferred spice level.
  • Store leftovers in an airtight container for up to 3 days.
