- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 1 zucchini, diced
- 1 can (14 oz) crushed tomatoes
- 4 cups vegetable broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 lasagna noodles, broken into pieces
- 1 cup spinach, chopped
- 1/2 cup vegan ricotta (optional)
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté for 2 minutes.
- Add bell pepper, carrot, and zucchini. Cook for 5 minutes.
- Stir in crushed tomatoes, vegetable broth, basil, oregano, salt, and pepper.
