A simple and nutritious vegan spinach pasta dish that’s quick to make and packed with flavor.

Ingredients

  • 8 oz pasta of your choice
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup nutritional yeast
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute.
  3. Add spinach and cook until wilted, about 2-3 minutes.
  4. Stir in cooked pasta, nutritional yeast, salt, black pepper, and red pepper flakes.
  5. Toss everything together and serve warm.
