A hearty and flavorful vegan chili made with sweet potatoes, beans, and spices. Perfect for a cozy meal.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add bell pepper and sweet potatoes, cook for 5 minutes.
  4. Stir in chili powder, cumin, and smoked paprika.
  5. Add beans, tomatoes, and vegetable broth.
  6. Bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
  7. Season with salt and pepper.
  8. Serve hot.

Notes

  • For extra spice, add a pinch of cayenne pepper.
  • Top with avocado or cilantro if desired.
