A simple and hearty vegetable orzo soup packed with fresh ingredients and rich flavors.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 cup orzo pasta
  • 1 can diced tomatoes (14 oz)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add orzo, diced tomatoes, thyme, and oregano. Simmer for 10 minutes.
  6. Season with salt and pepper.
  7. Stir in spinach and cook until wilted, about 2 minutes.
  8. Serve hot.

Notes

  • You can substitute spinach with kale.
  • Add cooked chicken for extra protein.
  • Store leftovers in the fridge for up to 3 days.
