A quick and easy fried rice loaded with fresh vegetables for a nutritious meal.

  • 1 tbsp vegetable oil
  • 2 eggs
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt to taste

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add garlic and stir for 30 seconds.
  3. Add mixed vegetables and cook for 3 minutes.
  4. Push vegetables to one side, scramble eggs in the pan.
  5. Add rice, soy sauce, and sesame oil. Stir well.
  6. Cook for 5 minutes, stirring occasionally.
  7. Season with salt and serve hot.
