  • 1 lb venison loin
  • 1 cup red wine
  • 2 tbsp butter
  • 1 shallot, minced
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup beef stock

Instructions

  1. Season the venison loin with salt and pepper.
  2. Sear the loin in a hot pan with butter for 3 minutes per side.
  3. Remove the loin and let it rest.
  4. In the same pan, sauté shallots until soft.
  5. Add red wine and thyme, simmer until reduced by half.
  6. Stir in beef stock and cook for 5 minutes.
  7. Slice the venison and serve with the sauce.
