A creamy and comforting white chicken lasagna soup that brings all the flavors of lasagna in a bowl.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 lasagna noodles, broken into pieces
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and mushrooms. Cook until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add broken lasagna noodles and cook until tender.
  5. Stir in shredded chicken, heavy cream, and spices.
  6. Simmer for 10 minutes.
  7. Add mozzarella and Parmesan cheese. Stir until melted.
  8. Serve hot.
