A healthy twist on tacos using zucchini as the shell, filled with ground turkey and spices.

Ingredients

  • 2 medium zucchinis
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the insides.
  3. In a skillet, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add ground turkey and cook until browned.
  6. Stir in taco seasoning and diced tomatoes, cook for 5 minutes.
  7. Fill zucchini halves with turkey mixture.
  8. Top with cheese.
  9. Bake for 25 minutes or until zucchini is tender.
