Crispy zucchini fritters that are low in carbs.

Ingredients

  • 2 medium zucchinis, grated
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying

Instructions

  1. Grate the zucchinis and squeeze out excess moisture.
  2. In a bowl, combine grated zucchini, almond flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper.
  3. Mix well until all ingredients are combined.
  4. Heat olive oil in a skillet over medium heat.
  5. Drop spoonfuls of the mixture into the skillet and flatten them slightly.
  6. Cook for 3-4 minutes on each side until golden brown.
  7. Remove from skillet and place on paper towels to drain excess oil.
  8. Serve warm.

Notes

  • Make sure to remove as much moisture from the zucchini as possible.
  • Adjust seasoning according to your taste.
  • These can be served with a dipping sauce of your choice.
