- 2 medium zucchinis, grated
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil for frying
- Grate the zucchinis and squeeze out excess moisture.
- In a bowl, combine grated zucchini, almond flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper.
- Mix well until all ingredients are combined.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet and flatten them slightly.
- Cook for 3-4 minutes on each side until golden brown.
- Remove from skillet and place on paper towels to drain excess oil.
- Serve warm.
Notes
- Make sure to remove as much moisture from the zucchini as possible.
