Crispy zucchini fritters that are easy to make and delicious.

Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a bowl.
  2. Add salt and let it sit for 10 minutes.
  3. Press out excess moisture from the zucchinis.
  4. Add flour, Parmesan cheese, eggs, black pepper, garlic powder, and onion powder.
  5. Mix until well combined.
  6. Heat oil in a skillet over medium heat.
  7. Scoop spoonfuls of the mixture into the skillet.
  8. Fry until golden brown, about 3-4 minutes per side.
  9. Remove and drain on paper towels.
  10. Serve warm.
