- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Oil for frying
- Grate the zucchinis and place them in a bowl.
- Add salt and let it sit for 10 minutes.
- Press out excess moisture from the zucchinis.
- Add flour, Parmesan cheese, eggs, black pepper, garlic powder, and onion powder.
- Mix until well combined.
- Heat oil in a skillet over medium heat.
- Scoop spoonfuls of the mixture into the skillet.
- Fry until golden brown, about 3-4 minutes per side.
- Remove and drain on paper towels.
- Serve warm.
