A hearty and creamy soup inspired by Olive Garden’s Zuppa Toscana, featuring Italian sausage, potatoes, kale, and a rich broth.

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups water
  • 3 large potatoes, cubed
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Brown the Italian sausage in a large pot over medium heat. Drain excess fat and set aside.
  2. In the same pot, cook the bacon until crispy. Remove and set aside.
  3. Sauté the onion and garlic in the remaining bacon fat until softened.
  4. Add chicken broth, water, and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes).
  5. Stir in cooked sausage, bacon, kale, and heavy cream. Simmer for 5 minutes.
  6. Season with red pepper flakes, salt, and pepper. Serve hot.

Notes

  • Use russet or Yukon Gold potatoes for best results.
  • Substitute kale with spinach if preferred.
  • For a lighter version, replace heavy cream with half-and-half.
