A hearty and comforting soup combining the flavors of beef short ribs and lasagna.

Ingredients

  • 1 lb beef short ribs
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Brown the beef short ribs in a large pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Cook until softened.
  3. Stir in crushed tomatoes, beef broth, oregano, basil, and black pepper.
  4. Simmer for 1 hour until the beef is tender.
  5. Remove the ribs, shred the meat, and return to the pot.
  6. Add broken lasagna noodles and cook until al dente.
  7. Serve topped with ricotta, Parmesan, and mozzarella cheese.

Notes
