- 1 lb beef short ribs
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp black pepper
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- Brown the beef short ribs in a large pot over medium heat.
- Add onion, garlic, carrot, and celery. Cook until softened.
- Stir in crushed tomatoes, beef broth, oregano, basil, and black pepper.
- Simmer for 1 hour until the beef is tender.
- Remove the ribs, shred the meat, and return to the pot.
- Add broken lasagna noodles and cook until al dente.
- Serve topped with ricotta, Parmesan, and mozzarella cheese.
