- 2 boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 3 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
- 2 tbsp vegetable oil
- 1 tsp cornstarch
- 1/4 cup water
- 1/2 tsp red pepper flakes (optional)
- Heat vegetable oil in a large pan over medium-high heat.
- Add chicken and cook until browned, about 5-6 minutes. Remove from pan.
- Add garlic and ginger, stir for 30 seconds until fragrant.
- Add all vegetables and stir-fry for 4-5 minutes until tender-crisp.
- In a small bowl, mix soy sauce, honey, sesame oil, cornstarch, and water.
- Return chicken to the pan and pour the sauce over.
- Stir well and cook for 2-3 minutes until the sauce thickens.
- Serve over rice or noodles.
Notes
- Use any vegetables you prefer.
- For extra heat, add more red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
