  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup uncooked brown rice
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, diced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook brown rice according to package instructions.
  2. Season chicken breasts with cumin, chili powder, salt, and pepper.
  3. Heat olive oil in a pan over medium heat. Cook chicken for 6-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice.
  4. In a bowl, mix black beans, corn, tomatoes, cilantro, and lime juice.
  5. Assemble bowls with rice, chicken, bean mixture, and diced avocado.
