A rich and creamy shrimp Tuscan recipe with garlic, sun-dried tomatoes, and spinach in a velvety sauce.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add shrimp and cook for 2 minutes per side until pink. Remove and set aside.
  3. In the same skillet, sauté garlic and sun-dried tomatoes for 1 minute.
  4. Add spinach and cook until wilted.
  5. Pour in heavy cream and stir in Parmesan cheese and Italian seasoning.
  6. Simmer for 3-4 minutes until the sauce thickens.
  7. Return shrimp to the skillet and toss to coat.
  8. Season with salt and pepper. Serve warm.
