  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add shredded chicken, egg noodles, salt, pepper, and thyme.
  6. Cook for 8-10 minutes until noodles are tender.
