- 1 cup of cherry tomatoes, halved
- 1 cup of bell peppers, diced
- 1 cup of spinach, chopped
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of oregano
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine zucchini, cherry tomatoes, bell peppers, and spinach.
