Ingredients

  • 2 cups of zucchini, sliced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of bell peppers, diced
  • 1 cup of spinach, chopped
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine zucchini, cherry tomatoes, bell peppers, and spinach.
  3. Add olive oil, garlic, oregano, salt, and pepper. Toss to coat.
  4. Spread the mixture on a baking sheet.
  5. Bake for 20-25 minutes until vegetables are tender.
