Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine cream cheese and erythritol until smooth.
  3. Add sour cream and mix well.
  4. Incorporate eggs one at a time, mixing after each addition.
  5. Add vanilla extract and mix until combined.
  6. If making chocolate version, add cocoa powder and mix.
  7. Pour the mixture into a greased springform pan.
  8. Bake for 50-60 minutes or until set.
  9. Let it cool, then refrigerate for at least 4 hours before serving.
