A low-carb, high-protein turkey meatloaf stuffed with spinach.

Ingredients

  • 1 lb ground turkey
  • 2 cups fresh spinach
  • 1 egg
  • 1/4 cup almond flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.
  2. Mix turkey, egg, almond flour, and spices in a bowl.
  3. Sauté spinach in olive oil until wilted.
  4. Press half the turkey mixture into a loaf pan.
  5. Layer spinach on top.
  6. Cover with remaining turkey mixture.
  7. Bake for 45 minutes.
  8. Let rest for 5 minutes before slicing.
