  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons Meyer lemon zest
  • 1/4 cup Meyer lemon juice
  • 1/2 cup whole milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each.
  5. Mix in lemon zest and juice.
  6. Alternate adding flour mixture and milk, beginning and ending with flour.
  7. Pour batter into prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • Store in an airtight container for up to 3 days.
  • For extra lemon flavor, drizzle with a glaze made of powdered sugar and lemon juice.
