- 3 lbs beef short ribs
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp tomato paste
- 1 tsp black pepper
- 1 tsp dried thyme
- Heat olive oil in a pan over medium-high heat. Brown the short ribs on all sides, about 3 minutes per side.
- Transfer the ribs to the slow cooker.
- In the same pan, sauté onion and garlic until softened, about 3 minutes.
- Add beef broth, soy sauce, brown sugar, tomato paste, black pepper, and thyme. Stir well.
- Pour the mixture over the ribs in the slow cooker.
- Cover and cook on low for 8 hours or high for 4 hours, until the meat is tender.
- Serve hot with mashed potatoes or rice.
