A creamy and flavorful low-carb soup made with spinach and mushrooms.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg (optional)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in mushrooms and cook until tender.
  4. Add spinach and cook until wilted.
  5. Pour in vegetable broth and bring to a simmer.
  6. Reduce heat, stir in heavy cream, salt, pepper, and nutmeg.
  7. Simmer for 5 minutes, stirring occasionally.
  8. Blend until smooth if desired.
  9. Serve hot.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For a thinner consistency, add more broth.
