A low-carb, sugar-free mac and cheese made with cauliflower for a keto-friendly dish.

Ingredients

  • 1 medium head cauliflower, cut into florets
  • 2 tbsp butter
  • 1/4 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam cauliflower florets until tender, about 5-7 minutes. Drain well.
  3. In a saucepan, melt butter over medium heat. Add heavy cream and stir.
  4. Add cheddar and mozzarella cheeses, stirring until melted and smooth.
  5. Mix in garlic powder, onion powder, salt, and pepper.
  6. Combine cheese sauce with steamed cauliflower and stir well.
  7. Transfer to a baking dish and bake for 15-20 minutes until bubbly.

Notes

  • For extra crispiness, broil for 2-3 minutes at the end.
  • Store leftovers in an airtight container for up to 3 days.
